EASY AND FUN-FILLED RECIPE OF RAINBOW CHOCOLATE CHIP MUFFINS:
Rainbow chocolate chip muffins are loved by all age groups. These rainbow chocolate chip muffins are bakery styled and very quick to bake. Even your kids will love to bake them along with you as they are easy and fun filled. Kids love to have them in their school lunch box. These can be enjoyed with a cup of coffee or tea.
So let’s start Muff’in 😀
Preparation time: 10 – 15 minutes
Baking time: 20 minutes
Yields: 10 – 12 Muffins
All-purpose flour 2 cups
Baking powder 2 Tablespoons
Sugar ½ cup
Salt ½ Tea spoon
Milk ¾ cup
Vanilla essence 1 teaspoon
Mini Semi sweet Chocolate chips ¾ cup
Oil / Melted Butter ½ cup
Food Colors as available or required
Pre heat oven to 400 °F (Around 205 °C).
Line the muffin tray with paper cups or grease the tray with cooking spray / Oil / butter.
Mix all the dry ingredients; Flour, Baking powder, sugar, salt and semi sweet chocolate chips.
Lightly beat one egg.
Mix well; milk, oil / butter and Vanilla essence in egg.
Take a large bowl and mix all the dry ingredients and wet ingredients.
Stir until its moistened. Do not over mix. The batter will be lumpy.
Take bowls and separate batter equally into them (one bowl for each color that you need to use).
One by one put few drops of colors into each bowl and mix well.
Spoon out each batter into muffin cups in the form of layers.
For Example: you need to make 3 colors, take 1 teaspoon each and pour one by one on top of each other. Do not mix or shake.

Place on the medium or upper rack of the oven.
Bake for 16 minutes to 20 minutes or until a golden color is obtained.
Insert a tooth pick to check, if it comes out clean take out the tray.
Cool for 5 mins and take out from the tray.
Can be served with Strawberries, Chopped Bananas, whipped cream, tea, coffee or as it is.
Do not mix the batter until smooth. Mix only until moistened. The batter should be lumpy.
Over mixing can result in chewy or hard muffins.
You can also add some chopped nuts in the mixture, but I don’t prefer as I have kids who are not fond of nuts.
