Easy Recipe of Chicken Fried Rice:

Chicken Fried Rice is an all time favorite dish in our home. It can be cooked in different variations according to one’s taste. Chicken Fried Rice is a much loved dish among kids and adults. It is popular among different parts of the world like China, Britain, United States, Pakistan, India, etc.. So here is an easy recipe to make it. It can be served with any Chinese gravy like Manchurian, Shashlick, Chilie Chicken ( Recipe here ), Kung pao, Etc. Now you don’t always need to go to a restaurant to satisfy your taste buds. This is perfect for any meal time; school tiffin, lunch or dinner.

INGREDIENTS:

ITEMS                                           QUANTITY

Rice                                            ½ Kilo grams

Chicken                                      2 Breast pcs

Carrots                                          3 pieces

Spring Onion                        2 pcs ( green part )

Peas                                                 1 Cup

Capsicum                                           1

Turnip                                      1 medium size

Green Chilies                                   2-3

French Beans                           ½ cup (Optional)

Chinese Salt                         1 teaspoon Optional

Table salt                        2 ½  teaspoon + ¼ teaspoon

Sugar                                           1 teaspoon

Soya sauce                                    ¼ cup

White vinegar                           ¼ teaspoon

Oil                                                      ¼ cup

You can also add other vegetables according to the nutritional values and your taste buds like Corn, Bean sprout, etc.
Also you can alternate Chicken with shrimps or no meat at all.

PREPARATION:

Soak rice in lukewarm water for 20 minutes.

Cut carrot, capsicum, turnip, French beans into small pieces.

Chop green chilies and spring onion finely.

Cut Chicken into small pieces.

Boil 1 liter of water with 2 ½ teaspoon of salt. After water comes to boil put soaked rice. Once rice are half boiled put ¼ teaspoon of vinegar in it and then strain the water and keep aside.

METHOD:

Take a wide pan, heat oil and add small chicken cubes; fry them.

When chicken turns light brown add carrot then fry it a little.

Add vegetables one after another. Fry a little and add sugar. I add sugar so that the color of vegetables remains fresh.

Then add ¼ teaspoon of table salt and fry for another 5 minutes.

Now grease a pan put half rice in it, layer ½ vegetable then layer remaining rice and again vegetables on top.

On top put soya sauce and Chinese salt.
Mix rice well and put the chicken fried rice for simmer.

Serve hot along with any Chinese Sauce.
