Easy Recipe of Cream of Spinach Soup
The cream of spinach soup is extremely healthy and easy to make with very less ingredients. It is creamy in texture but contains very little cream in actual. Roux gives it a fine and smooth body. The flavor of spinach is very rich and when combined with cream and butter the flavor turns awesome. It is ideal for every age; even my 1 year old enjoys it.

|Boiled Spinach||4 table spoons|
|Butter||2 table spoons|
|Chicken broth / stock||2 ½ cups|
|Milk||1 ¼ cups|
|Full Cream||2 table spoons|
|Flour||2 table spoons|
|Salt||as to taste|
|Black Pepper powder||as to taste (optional)|
Boil spinach in some water and make puree in a chopper or blender.
Prepare 2 ½ cups of chicken stock/ broth.
Prepare roux to thicken the soup.
To prepare a roux heat butter and add flour in it. Mix well and fry it for 2 to 3 minutes. Don’t burn the mixture. Cool it slightly and then very slowly add milk while keep stirring continuously.
Boil the stock and add 4 table spoons of boiled and pureed spinach. Mix well.
Now add the prepared mixture of butter, flour and milk in spinach and stock.
Cook the soup until it gets thick.
Now take full cream and beat well.
When soup thickens add half of the cream and keep remaining for garnishing.
Season soup with salt and black pepper powder as to your taste. This step is totally optional.
Garnish with cream, coriander leaves (optional) or in any way you like.
Serve hot with buttered toasts / slice, French sticks or croutons.
You can easily double, triple or increase the quantity of the recipe according to your needs.
If you are in a rush you can use the ready-made chicken cubes to make the stock, but it’s always healthy to use homemade stock.
