Cauliflower dry curry
Gobi ki tarkari (Cauliflower dry curry) is a very famous dish in Indo-Pak. It can be cooked in variety of styles. It is highly nutritious and very healthy. When I was a kid I never liked cauliflower, but there was one tarkari that my nano-maternal grandmother used to make which I loved it. It was this recipe of hers that made me love cauliflower. This dish is simple, easy to make and great in taste. It’s flavor is enhanced when mixed with spinach, all spices ( garam masala) and tomatoes. It can be served with chapatti, phulka and boiled rice.
Nutritional value is quiet high. 100 grams of raw white cauliflower provides 25 calories, is low in fat, carbohydrates, dietary fiber and protein. It has a high content (20% or more of the Daily Value, DV) of vitamin C and moderate levels (10-19% DV) of several B vitamins and vitamin K.

|Cauliflower (Gobi)||1/2 kilogram|
|Spinach (Palak)||1/2 cup finely chopped and cut|
|Onion (Piyaz)||One Medium size|
|Garlic paste (Pisa Lesun)||“1 tea spoon”|
|Ginger Paste (Pisi Adrak)||“1 tea spoon”|
|Tomatoes (Timatar)||2 small|
|Salt||as to taste|
|Red chillie powder||1/2 – 1 teaspoon|
|Turmeric powder (Haldi powder)||1/2 teaspoon|
|Ground coriander (Pisa dhania)||a pinch|
|Plain bread||1 slice|
- Ginger strips
- Green chillies
- Fresh coriander leaves
- All spice powder (garam masala)
Saute onions in a pan.
Put garlic paste and ginger paste, fry for half a minute.
Then add salt, turmeric powder, Red chillie powder and coriander powder.
Fry for a minute.
Now add cauliflower and spinach with 1/2 cup of water and let it simmer on a very low heat.
If the cauliflower doesn’t get tender add a little more water.
When it is tender add very finely chopped tomatoes and fry well.
Then add one slice of bread and again fry well until the oil separates a little.
Garnish it in the end with green chillies, all spices ( garam masala), fresh coriander and sliced ginger.
Serve hot with Chapati, Phulka or boiled rice.
Best for lunch and dinner.
