Spinach Potato aka Alu palak sabzi
Alu Palak is an easy to cook, simple and classic dish made with finely chopped Spinach and diced potatoes. It can be eaten with Chappati or Boiled rice. This dish is very nutritious and rich in Iron. It should be consumed atleast thrice a month.
Let’s start with the quick recipe.
Spinach ( Palak )- 1 KG
Potatoes- 3-4 medium sized cut into cubes
Onions- 1 medium
Garlic Paste- 1 ½ Tsp
Ginger Paste- 1 Tsp
Salt- add to taste
Red Chili Powder- 1 Tsp
Crushed Chilies- ½ Tsp
Turmeric Powder- ½ Tsp
Fenugreek Leaves (Qasuri Meethi)- 1 Tsp
White Cumin Seeds- ½ Tsp
Green Chilies- 3
Oil- 1 Cup
Cut spinach finely and wash thoroughly. Now boil in water for 10-15 minutes and strain it. In a separate pan put oil and saute finely cut onion. Add crushed chilies and white cumin seeds and fry a little. Now add garlic paste, ginger paste, salt, red chili powder, turmeric powder and fry a little. Now add finely chopped tomatoes and diced potatoes; add half cup of water.
When water dries fry a little and add boiled spinach and fenugreek leaves and fry well for 5 minutes. Now add ¼ cup water, cover the pan and reduce the flame to very low. When all the water dries garnish it with chopped green chilies and whole chilies.
